A change of pace from pine nuts and basil.  This pesto goes especially well with grilled chicken.
1/3 cup walnuts
4 garlic cloves
3 cups fresh mint leaves
1/2 cup olive oil
1 tablespoon red wine or balsamic vinegar
Finely chop walnuts and garlic in processor.  Add mint leaves and chop finely.  Add oil and vinegar and blend until pesto is
smooth.
This recipe yields ?? servings.

Comments:  Like most pestos, this can be made ahead and frozen for up to 3 months.
