Snow Pea, Pepper and Cabbage Salad

This refreshing, beautifully multicolored salad looks like a spring bouquet.  Snow peas and mint are two of the season's
brightest flavors.
2 tablespoons olive oil
1 1/2 tablespoons rice wine vinegar
1 teaspoon salt
1/2 packet sugar substitute
1/2 pound snow peas
3 cups shredded green cabbage - (abt 1/2 lb)
1 red bell pepper, thinly sliced
3 green onions, thinly sliced
1/4 cup fresh chopped mint
Mix olive oil, vinegar, salt and sugar substitute in a small bowl.  Place snow peas with enough water to cover in a microwave-safe
bowl.  Cover with plastic wrap; microwave on high one minute.  Drain and slice in thirds lengthwise.
Mix snow peas, cabbage, pepper, onion and mint in a large bowl.  Add dressing; toss to coat.  Chill 15 minutes to blend flavors.
This recipe yields 4 servings.

1 package Le Heavenly Homemade Chocolate Soft
Serve Mix - (14 grams)
2 1/4 cups heavy cream, divided
3/4 cup egg whites
4 Endulge Chocolate Candy Bars (1.06 oz ea), chopped
In a medium bowl combine mix, 2 cups heavy cream and egg whites.  With electric mixer on low speed, beat until combined.
Increase speed to medium and beat until slightly increased in bulk, about 2 minutes.
Pour ice cream mix into ice cream maker.  Process according to manufacturer's directions.
Heat remaining 1/4 cup heavy cream and Endulge bars over moderate heat, stirring often until chocolate melted and mixture is
smooth; set aside to cool 10 minutes.
Place one-half of ice cream into a shallow container.  Drizzle one-half of the chocolate mixture over ice cream.  Drag a knife
through the chocolate and ice cream in a zigzag pattern to swirl.  (Be careful not to over mix.)  Repeat with remaining ice cream
and chocolate.  Chill 1 hour.
This recipe yields 8 servings.
